  • Masher
  • Pastry Blender

  • 6 eggs
  • 1 avocado diced
  • 3 tbsp mayonnaise
  • 1 tbsp mustard
  • 1 tsp vinegar
  • 1 tsp salt
  • 0.25 tsp pepper
  • Chives optional
  • Smoked paprika optional
  • Diced tomatoes optional
  • Chopped herbs optional

  • Place the eggs in a single layer at the bottom of a saucepan. Fill the saucepan with enough water to cover the eggs by at least an inch.
  • Bring the water to a boil over high heat. Turn off the heat once the water reaches a boiling point and let the eggs sit in hot water for 12 minutes.
  • Fill a bowl with ice-cold water. Using a slotted spoon, carefully transfer the eggs to the bowl of cold water.
  • Let the eggs sit in the cold water for a few minutes to stop them from cooking further.
  • Once the eggs are cooled, gently tap each egg on a countertop until cracks form all over the shell.
  • Using your fingers, peel off the shell, starting from the large end.
  • Cut the eggs in half lengthwise and carefully remove the yolks, careful not to break the egg whites.
  • Mash the yolks with a fork or potato masher.
  • Add avocado, mayonnaise, mustard, vinegar, salt, and pepper to the mashed yolks. Mix until everything is well combined.
  • Scoop the mixture into a piping or ziplock bag with the corner snipped off. Pipe the mixture into the egg whites.
  • Garnish with chives, smoked paprika, or anything else you like. Serve immediately or store in the fridge for later.

    Serving Suggestions

Deviled eggs are great as an appetizer or side dish. However, they can also be the main course! Try serving them with:
    • A simple green salad
    • Sliced fruit
    • Baguette slices
    • Crackers
    • Vegetable sticks

    Storing Suggestions

Store deviled eggs in the fridge for up to 3 days.
If you want to make them ahead of time, prepare the egg yolk mixture and store it in a piping bag or ziplock bag in the fridge. Pipe the mixture into the egg whites and garnish as desired when ready to serve.
