Ingredients
  

  • 1 chuck roast or 3-4 pound
  • 1 tsp salt
  • 0.5 tsp pepper
  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 carrots peeled and diced
  • 3 celery stalks diced
  • 4 cloves garlic minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 tsp thyme
  • 0.5 tsp rosemary

Instructions
 

  • Preheat the oven to 375°F or 190°C.
  • Sprinkle the chuck roast with salt and pepper.
  • In a large Dutch oven, heat olive oil over medium-high heat.
  • Add the chuck roast and sear on all sides until browned.
  • Remove the roast from the pan and set it aside.
  • Add onion, carrots, celery, and garlic to the same pan. Cook until vegetables turn soft for about 5 minutes.
  • Pour in red wine and beef broth. Stir to combine.
  • Add the chuck roast back into the pan. Add thyme and rosemary.
  • Cover the pan with a lid and place it in the oven. Bake for 3-4 hours, or until the meat is cooked through and falling apart.
  • Remove the pot roast from the oven and let rest for 10 minutes before slicing and serving.
