Ingredients
  

  • 1 cup kosher salt
  • 1 cup brown sugar
  • 1 gal water
  • 1 turkey
  • 1 onion quartered
  • 1 head garlic cloves peeled
  • 2 tbsp black peppercorns
  • 1 tbsp rosemary leaves
  • 1 tbsp thyme leaves

Instructions
 

  • In a pot, combine salt, sugar, and water. Now, stir until the salt and sugar have dissolved.
  • Place the turkey in the brine solution. Always remember that the turkey should be completely submerged.
  • Use a lid to cover and refrigerate for 4 hours.
  • Remove the turkey from the brine solution. Next, rinse the turkey with cold water. Then, pat dry with paper towels.
  • Place the turkey in a roasting pan.
  • Preheat the oven to 325°F.
  • The roast temperature of the turkey has to reach 165°F. This should take 2-3 hours.
  • Rest the turkey for 20 minutes before carving.
