  • Large pot

  • 1 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup white rice uncooked
  • 2 cups chicken broth
  • 1 can diced tomatoes (15-oz) undrained
  • 1 green bell pepper diced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp pepper


  • In a large pot, heat some oil over medium heat.
  • Next, add the onion and garlic and cook until softened, about 5 minutes.
  • Add the rice and chicken broth and stir to combine.
  • Add the diced tomatoes, bell pepper, chili powder, cumin, smoked paprika, salt, and pepper.
  • Stir to combine. Bring this mixture to a boil. Then reduce the heat to low. Simmer for 20-25 minutes, occasionally stirring, until the rice is cooked.
  • Remove the pot from the heat. Let it sit for 5 minutes to absorb the flavors. Serve warm.
