Spanish Rice Recipe
This recipe is for you if you are into some good Spanish rice! This dish is not just a delicious rice recipe, It's also one of the perfect side dishes for any Mexican-inspired meal, and it's so easy to make!
- 1 tbsp olive oil
- 1 onion diced
- 2 cloves garlic minced
- 1 cup white rice uncooked
- 2 cups chicken broth
- 1 can diced tomatoes (15-oz) undrained
- 1 green bell pepper diced
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 0.5 tsp salt
- 0.25 tsp pepper
In a large pot, heat some oil over medium heat.
Next, add the onion and garlic and cook until softened, about 5 minutes.
Add the rice and chicken broth and stir to combine.
Add the diced tomatoes, bell pepper, chili powder, cumin, smoked paprika, salt, and pepper.
Stir to combine. Bring this mixture to a boil. Then reduce the heat to low. Simmer for 20-25 minutes, occasionally stirring, until the rice is cooked.
Remove the pot from the heat. Let it sit for 5 minutes to absorb the flavors. Serve warm.
This dish is delicious, but you could also serve it with grilled chicken or shrimp.
