  • 1 pound rotini pasta
  • 1/2 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 pint cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 red onion diced
  • 1/2 cup mozzarella cheese shredded
  • 4 bacon strips cooked and diced


  • Cook pasta according to package instructions. Drain and rinse with cold water.
  • Whisk together olive oil, white wine vinegar, sugar, salt, and black pepper in a large bowl.
  • Add the cooked pasta, cherry tomatoes, cucumber, red onion, mozzarella cheese, and bacon strips. Stir until everything is evenly mixed.
  • Serve chilled or at room temperature.
