Potato Soup Recipe

- 1 pound Yukon Gold potatoes peeled and diced
- 4 cups chicken stock or vegetable stock
- 2 cups milk

In a large pot, bring the potatoes and stock to a boil. Cook the potatoes until they are fork-tender, about 15 minutes.
Remove the pot from heat and use an electric blender to puree the soup until smooth. Ensure not to put in the hot soup if your blender is not heat-resistant.
Stir in the milk or cream, salt, and pepper. Add them now if you are using bacon, cheese, or green onions.
Taste the soup and add more salt and pepper as needed. You may also want to add a splash of vinegar or lemon juice for extra flavor.
